The progress of fermentation is of primary importance for achieving the desired oenological objective. The actors in this biochemical transformation are the substrate (must), yeast, and nutrients. The substrate must be adequately prepared for a quality fermentation, thanks to the EVER SOLUTIONS available for the phases from harvest to fermentation. The yeast must be qualitatively perfect, and for this, EVER has created the Y-TEAM.

Finally, we must not forget the nutrients necessary for correct fermentation. Indeed, the yeast needs to find in the substrate: energy, carbon sources, nitrogen sources, activators of its metabolism, as well as protective factors. All these components must be present in the must or must be supplemented through exogenous additions. To promote the fermentative process, the OIV has authorized the use of “fermentation activators” which can be products derived from yeasts (autolysates, hulls, or inactive yeasts), ammonium salts, thiamine, and cellulose. The objective of adding ACTIVATORS is to promote a rapid start, as well as a regular course and completion of alcoholic fermentation, by enriching the medium with nutritional elements, growth factors, and detoxifying the environment through the adsorption of yeast growth inhibitors.

TECHNICAL CHARACTERISTICS


CREAFERM is the organic nutrient developed by EVER’s Y-TEAM to improve the key aspects of every alcoholic fermentation: regular kinetics, increased aromatic expression, and complete bio-protection. It is a blend of YEAST AUTOLYSATE and YEAST HULLS, ideal for providing a correct supply of amino acid nutrients, particularly selected from group “B” (precursors) and group “A” (growth). It can be used in all types of fermentation where the goal is to enhance the aromatic characteristics of the selected yeast. CREAFERM increases the level of organic nitrogen, amino acids, and peptides, and provides mannoproteins and polysaccharides that positively affect the chemical-physical and sensory stability of the wine. It contributes to an adequate increase in sterols and long-chain fatty acids and raises the content of thiamine and trace elements.

APPLICATIONS


The use of these activators should be determined based on:

• Must composition (sugar richness, YAN content, etc.)
• The desired oenological objective
• Reactivation methods and nutritional strategies
• Yeast nutritional requirements
• Available technologies

Its richness in nutritional elements, particularly in readily assimilable amino acids from group “B”, suggests its use for yeasts that produce esters and acetates, and generally where an increase in fermentative aromatic performance is desired.

It is indicated from the earliest stages of fermentation in normal conditions with balanced musts. When used at yeast inoculation, it promotes cell multiplication and growth, optimizes fermentation kinetics by limiting the production of undesirable secondary compounds, and increases the amino acid supply for the yeast’s subsequent metabolic activities.

INSTRUCTIONS FOR USE AND DOSAGE


How to use: Dilute CREAFERM in a volume of must equivalent to 10 times its weight.

Add it to the total mass, homogenizing with a pump-over.

• 10-20 g/hl in the must at yeast inoculation.
• 10-20 g/hl as an addition at 1/3 of fermentation.

Notes:

• In musts with a significant deficiency in yeast assimilable nitrogen (YAN < 100 mg/l), it is recommended to supplement with a mineral nutrient (Zimovit, Zimovit T52).
• The addition of 30 g/hl of Creaferm provides the must with the maximum permitted dose of thiamine (0.6 mg/l).

PACKAGING

The product is hygroscopic; therefore, store in a cool, dry place, avoiding contact with the floor. Opened packages must be resealed as tightly as possible when not used in a single application and should be used within a few weeks.

Product based on raw materials compliant with: Regulation (EU) no. 231/2012 Codex OEnologique International. Product for enological use, as provided by: Regulation (EU) 2019/934 and subsequent amendments.

CREAFERM:

• conventional, allowed for organic production due to the unavailability of the organic variant (ref. EU Reg. 2018/848) with a specific derogation.
• Is NOT usable in NOP productions.
• suitable for use in products defined as Vegan.

Furthermore, EVER declares that they do not contain nanomaterials as specified by Regulation 2015/2283 and have not been treated with ionizing radiation pursuant to Directive 1999/2/EC and Legislative Decree 30 January 2001, No. 94. EVER informs that the only allergen handled in the plant is sulfur dioxide. EVER also markets Casein and Fish Glue.
